Free-form apple pie?

Recently, I made strawberry-rhubarb hand-pies again and (once again) ate them all in less than 24 hours. They are that good. And I have that little restraint. Following the same recipe for the crust and only slightly amended recipe for the filling, I made what angry chicken (recipe source) called "apple galette". My crust was extra generous, so I folded it completely over for an enclosed free-form pie. Oooooooo....De. Li. Cious! We already ate half. I'm sure the rest will be gone before dinnertime tomorrow. Sad, sad, sad...but oh so good!




p.s. (especially for gail) Inspired to reduce refined sugars by a certain healthy eater I know, I used super-fine raw sugar in this recipe, and it was perfect! I think any added honey-type flavor from the sugar only enhanced the recipe. Highly recommended! And try those handpies too. Uh. Maze. Ing!

I have to say that I am super, super, super excited to see a couple of new recipes here...I haven't looked in a long time, but here they are, yay! :)

I claim not to like apple pie, because I DO have an issue with the texture of cooked fruit, but it's time for a major confession now...I've never actually tried it (in some ways I am still very much like a certain 4 year old I know when it comes to food)

So perhaps I will bite the bullet and make it...it certainly looks wonderful, and I like all of the ingredients that are in it...I'll let you know if I do.

Karly, I hear ya! I am the same...or was. I can't eat anyone else's apple pie, but this is MY pie and I made it the way I like it: with teeny tiny apple bits. I wash 'em, I peel 'em, and I cut 'em to the size I like, which is too tiny to give me texture issues.

I had to give this a go after I fell in love with the handpies, which I'm not ashamed to admit I was afraid to try even after I baked them the first time. Markus was loving them, and I thought I should at least give them a cursory nibble after going through the effort to make them...HEAVEN.

Cut up your fruit nice and small, and give it a go! And tell me what you think! I bet you'll be converted. :)
